Product Description Bob's Red Mill Hazelnut Meal is ground from whole hazelnuts. It pairs deliciously with chocolate —think of that famous chocolate hazelnut spread—or this flour can be folded into beaten egg whites to create hazelnut macaroons. It’s an essential ingredient in recipes like hazelnut flour olive oil cake or hazelnut cookies. Replace 30 percent of the wheat flour with hazelnut flour to add wonderful texture and rich, buttery flavour to your baking, while reducing the total carbohydrates. This makes it ideal for those following a low carbohydrate or paleo diet. Hazelnut flour is outstanding in pastries, pie crusts, cakes, cookies, pancakes and quick bread, but this flour can also be used in savoury applications. Use this nut flour in place of bread crumbs in meatballs, or as a coating for chicken and fish. Combine with almond flour for a deliciously complex nut flavour. Ingredients HAZELNUTS. Directions The rich flavors of hazelnut and dark chocolate make these wholesome cookies taste like a decadent treat. 1 Tbsp Flaxseed Meal, 3 Tbsp Water, 1 cup Bob's Red Mill Hazelnut Meal/Flour, 1/2 cup Coconut Sugar, 1/2 tsp Baking Soda, 1/4 tsp Salt, 3/4 cup Almond Butter, 1/2 cup Applesauce, 1 tsp Vanilla Extract, 1/2 Dark Chocolate Chips. Preheat oven to 350°F. Line a baking sheet with parchment paper. Combine flaxseed meal and water in a small bowl and set aside to thicken. In a medium bowl, whisk together hazelnut meal, coconut sugar, baking soda and salt. In a large bowl, mix together almond butter, applesauce, vanilla extract and flax/water mixture. Add dry ingredients to wet and mix well. Stir in chocolate chips. Place approximately 1 1/2 tbsp of dough per cookie on the prepared baking sheet, leaving 1 inch between each cookies. Bake until set, 15-18 minutes. Remove from the oven and cool on the baking sheet for 5 minutes, then move to a rack and cool completely. Makes 20 cookies.
